Eli's Handcrafted Black Diamond Knife Set
Eli Thorne still remembers the sound of a properly sharpened blade meeting a ripe tomato. Not a crunch. Not a smash. Just a quiet, clean glide through the skin, followed by the soft tap of a perfect slice landing on the board.
For more than 40 years, Eli worked out of his Portland, Oregon workshop as a master bladesmith and sharpener, tuning knives for serious home cooks, restaurant buyers, and people who cared about the small rituals of a good meal. But arthritis has finally made the work too hard on his hands. Before closing the shop for good, Eli is releasing his final workshop run: a 6-piece knife set designed around the one problem cooks complained about again and again — food sticking, dragging, and tearing under ordinary blades.
What makes Eli's Handcrafted Diamond-Matrix Knife Set special?
The first thing most people notice is the matte black blade finish, but the real difference is in the surface. Each blade features Eli’s Diamond-Matrix embossed texture, a raised-and-recessed pattern designed to reduce the amount of food touching the blade at once. Instead of wet slices clinging stubbornly to flat steel, tomatoes, potatoes, onions, and meats are encouraged to release more cleanly as you cut.
The result is a calmer kind of prep. The 8-inch chef knife moves through everyday chopping with a steady, controlled feel. The slicer is made for long, smooth cuts through roasts, breads, and larger produce. The 7-inch cleaver brings satisfying weight for heavier kitchen jobs without feeling like a crude butcher’s tool. Even the 5-inch utility knife earns its place, handling quick prep when pulling out a full-size blade feels like too much.
It is the kind of difference you notice in small moments: cucumber slices that do not stack wet against the blade, herbs that look cut instead of bruised, and meal prep that feels less like a fight with your tools. Eli designed the set for cooks who may never step into a professional kitchen, but still want the satisfying control of a blade made by someone who spent a lifetime listening to what good cooks actually needed.
Eli paired the dark stainless steel blades with wood-look ergonomic handles that feel warm in the hand and steady on the board. They are made for real kitchens, not display shelves — the kind of tools you reach for when you are making soup on a rainy night, prepping steak for the grill, or putting together a holiday meal for people you love.
The set arrives in a presentation gift box, making it just as fitting for a wedding, housewarming, Father’s Day gift, or serious kitchen upgrade. It feels less like buying another gadget and more like receiving the final chapter of a craftsman’s working life.

Please note
Each set is part of Eli Thorne’s limited final workshop run. Because arthritis has forced Eli into retirement, this collection is not being treated as an ongoing production line. Small cosmetic variations may occur, especially in finish, handle tone, and texture appearance, which is part of the character of a craftsman-led release. Availability may vary once the remaining boxed sets leave Eli’s Portland workshop inventory.
